Goulash – A quick and easy version
I will apologize in advance. I’m typically in a hurry when I cook so the pictures are subpar at best, however, I love a quick and easy weeknight throw together meal so I’m sharing anyway.
The farm tends to be less work (from a time perspective anyway) in the winter since our main focus is just keeping the animals fed and sheltered. No field work means we have a bit of welcomed downtime here and there. However, the snow and cold that keeps us out of the fields in the winter can make even the simplest task a challenge. Typically, unwrapping hay bales, opening gates, etc. is done on autopilot without so much as a second thought. But, when temperatures drop to below zero (as in 30 below right now) and you throw in blowing snow and maybe a little freezing rain, even the most mundane task becomes a chore.
So after fighting the elements, we always enjoy coming in for a warm, hearty meal. My version of goulash is an easy meal since I can prepare ahead of time and we can heat and serve when we come in for the evening. Andy’s aunt makes the best slow cooking goulash using roast (from Sandberg Land and Cattle Co of course) so I’ll have to see if she’ll share the recipe with us at some point 🙂 Anyway, if I have time, I’ll use some of the tomatoes I froze from our garden and just let the sauce cook longer. But using canned tomatoes is an easy way to speed up the cooking time.
Goulash
Equipment
- Dutch oven or large pot
Ingredients
- 2 lbs Lean Hamburger Preferably Sandberg Land and Cattle Company Beef
- Salt & Pepper
- 1 TBSP Olive Oil Extra Virgin
- 1 Yellow Onion
- 2 TBSP Worcestershire Sauce
- 2 Cups Beef Broth
- 1 TBSP Beef Broth Base
- 29 oz Tomato Sauce
- 14.5 oz Petite Diced Tomatoes
- 1 tsp Minced Garlic
- 2 tsp Chopped Parsley
- 2 Bay Leaves
- 2 Cups Pasta Noodles Macaroni, Rotini, etc
- Cheese (Cheddar, Feta, etc) Optional
Instructions
- Gather the ingredients.
- Add olive oil to Dutch oven and heat on medium.
- Add chopped onions and hamburger. Season with Salt, Pepper and Worchester. Cook until hamburger is browned. Add garlic.
- Add beef broth and base, both cans of tomatoes, parsley, bay leaves.
- Simmer for 5 minutes.
- Add pasta noodles, continue to simmer until pasta is tender.
- Remove bay leaves and serve.
- Garnish with parsley and cheese, if desired.
